Calling all sweet tooths out there! If one of the first things that crosses your mind when you think of a wedding is CAKE, then you're in the right place. There are so many trends with desserts at weddings, but a forever classic that is incredibly versatile is wedding cake! We wanted to spotlight one of our favorite bakers, Kellie Velasquez with Palette Cakes to find out some of her favorite current wedding cake trends. Maybe this will spark new inspiration for you :) Palette Cakes Kellie has been baking her whole life, but has been doing it professionally for the last 12 years! She's grown her love for wedding cakes in particular in the last 9 years. Kellie loves so many things about this business, but her favorite is, "I love designing custom cakes and seeing the vision become a reality! Once the cake is finished, there is no better feeling than seeing it all come together! I also love chatting with clients and hearing about their dream wedding spread!" We wanted to find out from Kellie what is something that all couples should know about the wedding cake industry and she informed us, "although bakers aren't at your wedding for more than an hour setting up, there is so much work and love that goes into your dream cake or dessert spread leading up to the big day! Hours of emailing, designing, baking, cleaning, creating those little details, seriously so much love!" Wedding Cake Trends We asked Kellie her current favorite wedding trends and here's 3 amazing ideas she provided us! Floral Designs. We are all probably familiar with fresh florals on wedding cakes, but have you seen sugar flowers as the main event? Kellie is a master at this and creates entirely edible florals to adorn your dream wedding cake design. Time and time again, we've heard from guests, "Wow! Those flowers are edible?!" Narrow Cakes. Whether the cake is single tiered or has multiple levels, narrowing the overall shape creates this art deco/modern look. Such a slight change that often times couple don't even think of it! It makes the world a difference if it fits within your wedding aesthetic. Colored Cakes. White is a forever classic choice and makes a great base for any type of wedding cake. However, have you ever considered color? There's so many ways to incorporate color into a wedding cake while still keeping it neutral if that's your goal. Color can bring a cake to life in ways other design elements simply cannot. Ombre color schemes, alternating colored tiers, speckled paint designs, and more - the list goes on for how color can enhance your design. Chat with your baker on their recommendations for what could be possible for your wedding cake! Vendor's Couple Advice Kellie's creative advice to couples who are currently wedding planning or starting the process is to, "hire professional vendors and trust them to create something magical for your big day! We do our best work when you provide guidance, but let us do our thing! Know what you like, but not necessarily 100% what you want - be open to something different!" Real Testimonials "There wasn’t much my husband and I had on our “must-have” list for the wedding, but my sweet tooth dictated that we had to have the most stunning cake and dessert table anyone had ever seen (and tasted)! We fell in love with the idea of sugar flowers and intricate but subtle detailing for our cake, and looked high and low for an artist that could deliver. We found Kellie and could not have been more tickled with how it turned out! Kellie immediately understood our vision and even supported a special flavor request for us (banana cake)! The masterpiece that Kellie created left us and our guests stunned! Kellie not only delivered the biggest, fluffiest, most elegant sugar flowers, but she crafted the most delicate appliqué detailing and hand painted a subtle blush marbling with gold accents across the entire cake. This cake was STUNNING! And it doesn’t stop there…we also wanted custom cookies and not only did Kellie painstakingly apply the same marbling and gold detailing to countless cookies, but she also had a custom stamp made to create this elegant embossing effect with our names (which she then gifted us on our wedding day). We also ordered several of Kellie’s homemade pastries and cookies (including my favorite - frosted oatmeal). And not only was everything beautiful, but it was also DELICIOUS! We had several guests tell us the cake was one of the best they ever had. EVER! And the cookies and pastries? Not a crumb left in the house. Kellie is the sweetest, kindest, and most talented chef. Whether you have a specific vision in mind or just know you want a beautiful cake, you cannot go wrong with Palette Cakes. Trust Kellie and she will deliver a fairytale of desserts that your guests will remember for years to come!" If you couldn't tell already from the above review, Kellie is amazing at what she does! However, we always like to ask our vendor spotlights if they had any other job in the world, what would they want to do? Kellie responded, "If I had to do any other job, I think it would be teaching! My mother was a teacher and I always admired the impact she got to make on so many lives. I've also found my favorite part of being a Pastry Chef back when I worked with large teams, was training new bakers! I absolutely loved sharing my knowledge and craft with someone new!"
